I love Peter for so many reasons. I thought I’d share one of them…
I was in Richmond, VA for a meeting yesterday & stopped for an appointment on the way home. I had talked to him at 5 & told him I would be home in an hour & I was hungry. He was sleeping when I called & I know how tired he is from work everyday & I thought he would just fall back asleep until I got back. At 6:30 I was still on the road & didn’t call because I really assumed he was sleeping & did not want to disturb him.
I call at about 6:45 to start waking him up because I was close. He picks up the phone right away & asks when I’ll be home. I was surprised & advised him it would be 10 minutes.
When I open the door I smell something fantastic. After unloading all my junk & using the ladies room I wander into the kitchen & he has 2 plates with the most appetizing dinner I’ve EVER seen!
So we were at Federico’s a few days ago for dinner (a very tasty italian restaurant up the road we went to on our first date) and he had ordered a fish dish with crab mango salsa. I did not try it because I was stuffed from my own dinner but he mentioned that it was “really good.” {side note: peter never thinks food is ‘really good’, ‘great’, or even just ‘good.’ it’s always ‘alright’ so when i heard him say “really good” i knew it was something special.}
So this was the inspiration and I’ve had his homemade salsa before & it’s great. But tonight it was fruity salsa with crab on top! The salsa was on top of a tower of pierogies & chicken. He put a drizzle of sweet honey mustard on top. I know it sounds a little odd but wow was it fantastic… the following will in no way compare to what it actually tasted like but it was so pretty I couldn’t pass taking a picture to share…
